- 米茄子は『ブラックビューティ』という品種が改良された外国種の茄子です。
- 外国種の茄子は基本緑色のヘタをしているのが特徴です。（日本種の茄子は黒いヘタをしています。）
- 形は楕円形で通常の茄子より大きめです。
- 種は少なく比較的肉質が締まっているので煮崩れを起こしにくく、田楽や焼き物に向いており漬物などの生食は不向きの茄子です。
