（１）搾る（しぼる）：すだちを横二つ切りにして、焼き魚や刺身、冷奴などに搾りかけます。
（２）擦る（する） ：水洗いしたすだちを皮のまま擦り、冷しそうめん等のつけ汁に加えたり、わさびに混ぜても風味が出ます。
